The Ingredients

  • Butter and flour for the tin
  • 100g butter
  • 200g sugar
  • 2 eggs
  • 50g polenta
  • 75g flour
  • ½tsp baking powder
  • 100g ground almonds
  • 100ml milk
  • Pine nuts for the top
  • Ingredients for the Filling:
  • 1 punnet of strawberries, hulled and cut in half
  • 60g icing sugar

Strawberry Polenta Cake
The Method
  1. Pre-heat the oven to 180oC.
  2. For the filling; place all the ingredients in a pan and simmer gently until the strawberries have completely broken down. Reserve until required.
  3. Butter an 8" cake tin, dust with flour.
  4. Whisk the butter and sugar together until very light and pale.
  5. Slowly whisk in the eggs.
  6. Add the polenta, flour, baking powder and almonds.
  7. Whisk again and then add the milk and whisk again.
  8. Pour into the tin.
  9. Swirl the strawberry into the mix.
  10. Sprinkle with some pine nuts and bake for 30 minutes.
