The Ingredients
- Butter and flour for the tin
- 100g butter
- 200g sugar
- 2 eggs
- 50g polenta
- 75g flour
- ½tsp baking powder
- 100g ground almonds
- 100ml milk
- Pine nuts for the top
- Ingredients for the Filling:
- 1 punnet of strawberries, hulled and cut in half
- 60g icing sugar

The Method
- Pre-heat the oven to 180oC.
- For the filling; place all the ingredients in a pan and simmer gently until the strawberries have completely broken down. Reserve until required.
- Butter an 8" cake tin, dust with flour.
- Whisk the butter and sugar together until very light and pale.
- Slowly whisk in the eggs.
- Add the polenta, flour, baking powder and almonds.
- Whisk again and then add the milk and whisk again.
- Pour into the tin.
- Swirl the strawberry into the mix.
- Sprinkle with some pine nuts and bake for 30 minutes.
